Abstract
The methods discussed in this second part are: 1) Physical methods, so me of which still play their part in maltings; other, more promising, techniques, such as near-infra-red reflectance spectroscopy, have stil l to be optimised, This last approach is of special interest to labora tories dealing with a large number of samples, but requires recalibrat ion for each harvest; 2) Visual and colorimetric methods have been fou nd interesting in recent years both for research and quality assurance , Colorimetric methods are being made more reliable by replacing the u se of the eye by image analysis, An overall summary is presented for e ach method, this integrates the strengths and the weaknesses of each.
