In this third part, the solid-liquid extraction and solid-liquid separ
ation methods are discussed. Thirteen different extraction techniques
are assessed in relation to malt modification and the precision and th
eir strengths and weaknesses are mentioned. The choice of methods is o
ften a delicate task, but should always be related to the prediction o
f industrial wort quality. Several methods are obsolete, as they do no
t take into account basic biochemical and process engineering knowledg
e. The extract calculation by using volumetric methods should be aband
oned in favour of mass determinations.
